Breakfast: I think I skipped it.. not a great idea, but it happens.

Lunch: Made these Swedish Meatballs! They were soooo good!

Dinner: leftovers

Dessert: Banana Pudding. I may have cheated a little, but at least it was still compliant. :)

Day 2

Breakfast: Kind of gross, but I just needed something in my belly, so I had a sausage link wrapped in lettuce. And later I had a peach slice.

Lunch: I made this again. I have yet to make it with a whole chicken, but it tasted divine with just the chicken breasts. I had to use coconut oil instead of grapeseed oil because I couldn't find it.

Dinner:

Symptoms: Tingling legs, fatigue, brain fog. Sore throat.

Day 1

Breakfast: I totes forgot I was doing this today. I don't know how I forgot; probably just half asleep since I had to take husband to work this morning. If anything, at least it was an Organic cereal. ;) With farm fresh milk.

Lunch: My friend posted a picture of her zucchini lasagna the other day and it made me want some! It looked really good, so I searched for a recipe and I found this on Pinterest.  Kid #1 and #3 ate it with  me, but Kid #2 wanted his white rice and steak. I'll battle him once I get feeling better. Also had a slice or 2 of a peach. I really should omit all sugar, but maybe once the fruit is gone I'll take a break.

Dinner: Leftovers from lunch. I had to take husband to work and pick him up, so I didn't have time to prepare anything... because I had a nap, too, this afternoon. >.<

Sorry, no pictures! Just pretend. I'll take some when it actually looks appetizing.

Main Symptoms: Sore throat, brain fog, low functioning thyroid (fatigue, hair loss).

Day 4

Made everybody waffles. Used our new Grade B Organic Maple Syrup. I had a taste of the syrup; it was yummy! (And, Whole30 approved)

I had the hamburger stuffs I made for dinner last night and will probably have it again for lunch. I need to go grocery shopping again. O____O

Day 3

I need to be more creative. And that will happen as soon as I have more energy. Usually I just wait to get out of bed minutes before Jimmy leaves for school. This morning, though tired, I actually got out of bed. My body feels a little weak still, but at the same time, some energy/liveliness. I'm way tired because Joss thinks he needs to go through a growth spurt and is eating 3x in the night.

I made bread in the breadmaker. White bread; which, I know.. I need to NOT make that. Horrible stuff. Anyway, I was sooooo strong and didn't have a crumb! I made the boys sandwiches. I guess those ingredients are better than what's in the store bought, right? I just need to figure out a way to make healthy bread. Paleo bread falls apart sooo easily.

Been having leftovers lately. No new recipes. Last night I did make hamburgers for dinner. Wrapped in lettuce with homemade mayo! I mashed an avocado with the mayo (too tired by then to make the Dreamy Avocado Ranch dip) and ate it as a "dressing."

Tired by 7:30pm!
